Coating Batters
A Batter is a blend of flours and various other components which may include starches, milk, eggs, spices, leavenings, stabilizers and other ingredients. Batters contain ingredients that enhance processing performance, improve functionality or add desirable characteristics. They:
- Provide a protective outer coating
- Impart flavor, including complex or exotic flavor systems
- Impart color, ranging from bright yellow to golden brown
- Provide texture, ranging from cake-like to crisp and crunchy
- Allow foods to be hand held
- Can be oven or fryer reconstituted
